A Veggie Packed Lunch

...that's both tasty and healthy!


Although I am no vegetarian, I have been enjoying making plant based meals over the last couple of weeks. Not only are they super healthy, they're also sooo much cheaper to make when not buying meat, and you're doing your bit for the environment by reducing your meat intake! Anyways, on to the recipe...

INGREDIENTS

1 onion
3 large tomatoes
1 red pepper
1 1/2 tbsp paprika
1 tbsp cayenne pepper
3 tsp cumin
1 tin of chickpeas
1 tin of cannelini beans
1 tin of sweetcorn

To serve:
Wholemeal wraps
Natural yogurt or mayonnaise
Avocado
Salad leaves


METHOD

Start by dicing the onion and frying in the pan with a little bit of oil. Then add the tomatoes and red pepper. To the vegetables, add the spices and season well. Fry this off for a further 5 minutes.
Then drain and wash the beans and sweetcorn well and add them to the pan. Keep the beans on the hob for a further 10 minutes until warm.

To serve spread a couple of teaspoons of the natural yogurt or mayonnaise on a wholemeal wrap and then add the warm beans, salad leaves and the avocado. And enjoy! It's as easy as that!




ADAPTATIONS?

This recipe is so so easy to adapt so it can be used in many different dishes. I've made a huge batch that I've frozen ready to take out whenever I need a quick and easy lunch or dinner. Here are a few ideas:
  • Serve warm with rice and green vegetables for a vegetarian chilli option. 
  • Serve as a sandwich filler with lots of salad
  • Serve with rice, guacamole, humus and chicken as a 'Mexican Bowl'
  • Serve cold with salad leaves, fresh chillies, tomatoes, cucumbers and avocados as a cold lunch.
  • Use different beans such as black beans or butter beans.
  • Serve with a hot jacket potato (normal or sweet potato) and salad, with creme fraiche.
