Christmas Gingerbread Santa Claus

I love Gingerbread... and when you can make it into cute 'lil people - I mean what's not to love right? So I thought I would write up my favourite gingerbread man recipe, for you all to try. Whether you make them to lay out for Santa on Christmas Eve, give as gifts, or simply just to wolf down straight away (which is what I will be doing...), they are such a quick and yummy treat to make, that takes 0 time and really 0 effort - even if they do look pretty damn cool. So, grab your apron, rolling pin and cookie cutters and get baking!

INGREDIENTS (makes 15-20)

175g dark brown sugar
85g golden syrup
100g butter
350g plain flour
1tsp bicarbonate soda
1tbsp ground ginger
1tsp cinnamon
1 egg
Ready made writing icing
Smarties/ other small sweets


Melt the sugar, golden syrup and butter in a saucepan over a low heat until melted. Leave to cool for 10 minutes afterwards.
Then tip all of the dry ingredients (flour, bicarbonate soda, ground ginger and cinnamon) into a mixing bowl. Slowly add the egg and the butter mixture into the flour and combine until smooth and dough like. 
Wrap the dough in cling film and pop it in the fridge for an hour. Make sure you remove the dough from the fridge before rolling and allow it to return to room temperature. Heat the oven to 200°C/ 180°C fan. 
Now for the fun stuff, roll the dough out on a floured surface and getting cutting, use cutters of all shapes and sizes for a varied bunch of people!
Then pop 'em in the oven for 10-12 minutes, keeping an eye on them at all times as they cook quickly! Once they're all baked leave them to cool on a cooling rack before icing. 
When they're completely cool, you can go to town with the icing. Then simply allow the icing to dry for about an hour before boxing them up and keeping them in the cupboard for future use!
