Chocolate Orange Cupcakes

Everyone loves Terrys Chocolate Orange right?! And combining those with chocolate cupcakes, it's a win win situation really... These cupcakes are super easy to make and can be ready in under an hour. Although chocolate orange can obviously be eaten all year round, I associate them with Christmas year in year out, so I thought this would be the perfect opportunity to share my recipe with you lovely lot. So grab you aprons and cupcake trays, let's get baking!

INGREDIENTS (makes 18)
150g Butter
120g Self-Raising Flour
30g Cocoa Powder
3 Medium Eggs
1 Orange
150g Caster Sugar
2 x 175g Terry’s Chocolate Oranges
Ready made chocolate butter cream icing (or make your own using this recipe)


Firstly pre-heat your oven to 180C and line your cupcake tray with cupcake cases. Then chop up one chocolate orange into teeny tiny pieces and set it aside, leave the other one for later. 
In a bowl, whisk the butter and sugar together until well combined and fluffy. Then fold in the self raising flour and cocoa powder and the eggs. Then add the juice and zest of one orange to the mixture. Finally fold in the chopped up chocolate orange. 
Spoon the mixture into the cupcake cases and pop them in the oven for 15-18 minutes. They should be bouncy to touch once finished. Leave them to cool for a minimum of an hour. Then spread the icing on top (or pipe it to be fancyyy!) and place a segment of the second chocolate orange on each cupcake as shown in the picture.
